Stromboli

Ingredients
  • 1 loaf frozen bread dough, thawed
  • 2 egg yolks, save the whites
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1 Tbs. Parmesan cheese
  • 2 Tbs. oil
  • 6-8 slices thin sliced ham
  • Mozzarella cheese – about 1 cup
  • Cheddar Cheese - about 1 cup
Instructions
  1. Spread the dough out on a buttered cookie sheet, like a pizza crust.
  2. Mix the other ingredients (minus the fillings) and spread like butter on the crust.
  3. Layer the fillings and top with cheese.
  4. Roll it up starting with the long edge so you end up with a long, log shape.
  5. Place it seam side down on the cookie sheet.
  6. Brush with the reserved egg white.
  7. Bake at 350 degrees for 30-40 minutes.
  8. Slice and serve with the pizza sauce.
Label:
  1. Thaw overnight in refrigerator
  2. Remove foil and plastic wrap
  3. Place on a greased cookie sheet
  4. Score 3 times on top
  5. Brush with an egg wash
  6. Bake at 350 degrees for 30-40 min

Slow Cooker Ham and Pineapple Sandwiches


2 lbs ham, fully cooked and cut into small cubes
1 (20 oz) can crushed pineapple
3/4 cup brown sugar
1 medium green bell pepper, diced
1/4 cup onions, minced
1/4 cup Dijon mustard
Hamburger Buns

Place all ingredients into a resealable gallon-sized freezer bag. Mix together in bag and zip closed.  When ready to eat, remove from freezer and place in a non stick sprayed slow cooker. Cook on HIGH for 4 hours or LOW for 5 to 6 hours.

Serve on hamburger buns with your favorite cheese. I love Swiss and ham together.

Serve with chips and your favorite side salad. Makes 6 servings

Hot Ham and Cheese Sandwiches

1/4 C. butter
2 T. mustard
2 T. chopped onion
1/2 T. Worcestershire sauce
1 t. poppy seeds
8 slices deli thin ham
8 slices Swiss cheese
8 dinner rolls or buns

Soften butter and mix well with mustard, onion, Worcestershire sauce and poppy seeds.  Cut rolls in half and spread mixture on both sides of rolls.  Place ham and cheese in roll.  Wrap each sandwich in foil and freeze.  To bake from frozen - bake at 350 degrees 30 min. or until hot.  To bake after thawed - bake at 350 degrees for 10 min. or until hot.

Ham & Potato Bake

4 c. Diced Potatoes, Cooked
1 1/2 c. Diced, Cooked Ham
1 Can Cream of Chicken Soup
1/2 Cup Milk
1/2 tsp. Paprika
1/4 tsp. Pepper
4 tsp. Dried Onion
1 c. Grated Cheese

Layer ham and potatoes in 9x9 casserole dish. Combine soup, milk, pepper, paprika and dried onion in bowl and mix well. Pour soup mixture over ham and potatoes making sure all pieces of ham are covered. Cover with aluminum foil and bake @ 400 degrees for 30 minutes. Uncover, sprinkle with grated cheese and return to oven to melt cheese. Let stand 10 minutes. Sauce will thicken as it stands.

Label: Thaw, bake covered @ 400 degrees for 30 minutes or until heated through.

Breakfast Burrito

4 small potatoes, par boiled
1/2 pkg. bacon, cooked and crumbled
2 cups ham, diced (approx.)
1/2 onion, chopped
6 eggs or egg substitute
Cheddar Cheese
8 tortilla

Par boil the potatoes and then dice into small cubes OR my hubby likes to dice the potatoes first and then he bakes them in the microwave for about 10 minutes or so, just until they are soft but still a little crunchy. Scramble the eggs separately, then mix above ingredients together (except cheese and tortilla's) in a large frying pan or skillet until everything is mixed and cooked to your liking. (approx. 15 minutes).
Fill 8 tortilla's with the mix, sprinkle cheese on top of mix, roll tortilla and serve with hot sauce, or wrap in foil or other dish and freeze for later.
If frozen - bake in 350 oven for 20-30 minutes just to heat through.

*We like to use the uncooked tortilla's, if you use these be sure to cook your tortilla before you fill them with the mix.

Ham and Cheese Stromboli

Ingredients
2 loafs (1 pound) frozen bread dough, thawed
1/2 pound sliced Swiss cheese
1/2 pound thinly sliced deli ham
2 cups (8 ounces) shredded cheese
1 package (16 ounces) frozen chopped broccoli, thawed and drained
1 teaspoon garlic powder

Directions
On a floured surface, roll each dough into an 18-in. x 12-in. rectangle. Layer with Swiss cheese, ham, cheese and broccoli to within 1 in. of edges; sprinkle with garlic powder. Roll up jelly-roll style, starting with a long side; seal seams and ends.
Place seam side down on a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 400° for 20 minutes. Freeze

Label: Defrost completely. Cover loosely with foil; bake 20-30 minutes, until heated through. Let stand for 5 minutes before slicing.

Freezer Hash Brown Casserole

4 eggs
1 1/2 C. hash brown potatoes
6 oz. evaporated milk
1 C. shredded cheddar cheese
1/2 tsp. salt
1/2 C. diced Onion
1/4 t pepper
1/2 C. diced green Pepper (or red and green)
1/2 C. shredded zucchini
dash cayenne pepper
1/2 C. diced ham

Mix eggs and milk together in a bowl. Add eggs and the remaining of the above ingredients into a one gallon freezer zip lock bag and seal the bag, removing all excess air and freeze. To serve thaw completely in refrigerator and put into a greased 9 x 9 dish. Bake uncovered in 350 degree oven for 45-50 minutes or until a knife inserted comes clean.
